{Crepe-O-Mania}

I love foods that are easy to prepare... especially breakfast foods.
Mornings are not my best time of day, and the last thing I want to do is prepare my family 
a nice warm breakfast.... 
Why?
I don't want to do the dishes, I don't want to worry about planning another meal to cook
(remember how I am terrible at menu planning?),
and so cereal is really the only viable option for breakfast.

However, my kids don't really agree with me.
While they will choke down happily eat the cereal,
they would much prefer waffles, pancakes, or even cinnamon toast.

In my search to find something more suitable for my little girls' breakfast,
I have discovered the wonderful world of crepes.
I had them at a meeting last month, and haven't been able to get enough of them!

They are easy to prepare (which makes momma happy),
I always have the ingredients on hand (which makes momma and the wallet happy)
and they are simply delicious (which makes momma and girls happy)!
I love that crepes can essentially go with whatever I have in my fridge.

Typically you would use a cream cheese filling to put inside the crepe,
I have used strawberry yogurt, vanilla yogurt, Nutella, or even peanut butter.
To top the crepes, I just pull out some frozen berries and heat them in the microwave.
You can also use bananas if you would like.
And of course, crepes wouldn't be complete with out some powdered sugar sprinkled on top!



The first time I made crepes, it was a little frightening.
I scoured the internet for tutorials, but they all said to use a crepe pan.
What the heck? I don't have a crepe pan!
But I do have some wonderful non-stick skillets that can get the job done.
I found a wonderful tutorial here, that made my first crepe making adventure a success.


Since they have been such a big hit at my house, we have them once or twice each week.
We have even started eating crepes for dinner.
I made some last night, and instead of putting fruit on it,
I made a scrumptious filling out of ham, mushrooms, and green peppers using the recipe I found here.

Now if you'll excuse me, my mouth is watering, so I am going to go have a little crepe snack. :)
