Banana Oatmeal Cookies...Did I mention the Chocolate and Peanut Butter too?


It was a typical Monday morning... I just dropped off my little boy at daycare.  I turn on my computer and I quickly check my personal email, blog email, Facebook and Pinterest.  Usually a half hour later I start working.  This particular morning I got a little stuck on Pinterest.  I know that might be hard to believe...but these cookies were calling my name.
When I made them later that night, with my husband's input (usually uninvited) we tweaked them to our liking a bit.  He felt two ingredients were missing, chocolate and peanut butter.  This time his idea was well received!  These cookies are to die for!!!

 We tasted and approved!


RECIPE
Banana Oatmeal Chocolate Chip Cookies
1-1/2 cups flour
1 cup sugar
1/2 tsp Baking Soda
1/2 tsp salt
1/4 tsp nutmeg
3/4 tsp cinnamon
3/4 cup shortening
2 bananas-mashed
1 egg
1-3/4 cup quick oats
1/2 chocolate chips 

1. Preheat oven to 400 F
2. Sift dry ingredients together
3. Once dry ingredients are sifted, cut in shortening
4. After shortening is completely cut in, add bananas, eggs and blend together well.  Then mix in your oats and chocolate chips.
5. Spoon drops onto cookie sheet (a silpat will help them not stick too much) and bake at 400 F for 8-10 minutes.  Use a cookie scoop if you have one it makes them all nice and pretty and the same size.
Peanut Butter Frosting1/4 cup butter
1/4 cup peanut butter
2 Tbsp. milk
1 tsp. vanilla
2 cups powdered sugar

You may need to add a little more milk or powdered sugar to get the consistency you like.
